Here’s an easy and refreshing ham and lemon pasta recipe, perfect for cooking your ham leftovers. It will quickly become a classic recipe for weekday evenings.

- 3 cups of diced or crumbles ham leftovers;
- 350g of linguine;
- 2 washed lemons;
- ¼ cup of olive oil;
- 2 Tbsp of butter;
- 1 cup of gratted parmesan or reggiano cheese;
- Fresh parsley.
Preparation step by step
In a pot, boil water, add a pinch of salt and cook the linguini according to the indications on the box.
Wash lemons, then grate the zest, press the juice and put aside.
In a pan, melt the butter and add the oil, the lemon zest, the ham and cook for 2 to 3 minutes. Add the pasta and the lemon then mix well to distribute the mixture.
Add the Parmesan, stir a few more moments, then remove from heat. Divide in equal portions onto plates and finish with the chopped parsley. Add salt and pepper to taste, and Parmesan, if desired.
